Roasted Butternut Squash

So Saturday was summer! I hope you all made the most of it, it was a lovely day, only needed a jumper ๐Ÿ™‚ I chose this meal, it’s brilliant for lunch it’s not heavy on the stomach and its nice and summery!


1 Butternut squash
1 Small onion
225g Chorizo sausage
Salt and pepper

Estimated time: 50-60 minutes (depends on cooking time!)


This is pretty much a 3 step recipe ๐Ÿ™‚ Firstly chop the top and bottom ends off of the butternut squash. Using a peeler peel the whole squash, you don’t have to peel the squash as the skin can be eaten but this is easier and saves you having to cut off any dodgy bits ๐Ÿ™‚

Once peeled you simply need to chop the squash in half and then half again so that you’re left with 4 portions. With the 2 portions from the bottom be sure to scrape out the pips and stringy pulp, this isn’t hard and can be done with just a spoon, the other two just need the very middle scraped or cut out so you are left with a sort of ‘gully’. Place these on a lightly greased baking tray and leave to one side.


Now take your chorizo and chop into large chunks. Once chopped cut each chunk into 4, ideally you want to end up with bite size chunks. Sprinkle your chunks of chorizo into each of the 4 squashes try to make it even and the higher its piled the better ๐Ÿ™‚


Finally you want to dice your onion, again about bite size chunks. You don’t want them to be too small otherwise they will just burn in the oven. Once these are chopped sprinkle them on top of the chorizo.


Sprinkle the 4 squashes with some salt and pepper to season and then drizzle each with a small amount of olive oil, this will help prevent it burning.


Put these in the oven at 180c for 30-40 minutes. Check them at 30 mins just to make sure nothing is really burning and to see how cooked the butternut is. You can do this with a sharp knife or a skewer, when the squash is cooked it should be really easy to pierce ๐Ÿ™‚ as soon as they’re cooked they are ready to eat!!


And there you have it a lovely light summer lunch as hopefully summer is finally on its way! This is a very easy lunch that everyone will love and you can change what you fill it with, you can use cheese and herbs or different meats!!
