Mustard and Rosemary Roasted Chicken Breast

This is not something to go on its own, but is an amazingly tasty focus for a meal 🙂 especially as its chicken and will go with everything, I chose to make this with crushed rosemary potatoes, sugar snap peas and broccoli, simple but amazing!!! This is so simple anyone can do it!

Ingredients:
4 Chicken breasts
1tbsp Wholdegrain mustard
2tbsp White wine
Rosemary finely chopped
2 Cloves of garlic
1tsp Granulated sugar

Estimated time: 40 minutes

Directions:

First the rosemary, take the leaves off of the stalks as they are often ‘woody’ and don’t taste too nice. Finely chop the leaves, try to chop the herbs finely as you don’t really want a big chunk of it once its all cooked. Scrape these into a small bowl. To this you want to add the garlic, this again needs to be finely chopped as it can be quite a shock having a large chunk of garlic!

Into this bowl you can now stir in your mustard, stir in the white wine also and make sure it’s well mixed. You can use whichever mustard you prefer, it is your meal after all(Wholegrain mustard tends to be quite strong) :p once mixed you should be left with a sort of paste, not too runny or it will just slide of the chicken! Now add in the sugar and stir before tasting it, if not happy with the balance add more sugar or salt!

Lightly oil a baking tray and place the chicken breasts on spread out so they don’t stick. Using kitchen roll pat the chicken breast dry, this will help the mixture to stick. With a teaspoon spoon one teaspoon of the mix onto each chicken breast, leave it at just one to start with so you can judge how much you will need. Carefully spread the mix over the chicken and try to cover the entire breast. Any left over mix just add to the chicken 🙂

Once covered, put in the oven and cook at 180c for 25-30 minutes or until fully cooked.

And there you are, this is a very easy and unbelievably tasty chicken dish, it goes so well with potatoes and veg, or for a summery take have it with salad and focaccia bread! Enjoy it everyone, this is soo tasty!!!!
