100g grated cheddar
55g butter
160g Plain flour
1tsp Salt
1-2tbsp of water if needed

Estimated time: 30 minutes

Now these can either be made by hand or using any sort of mixer. Whichever way you choose to make these weigh your butter and flour into a large bowl and rub together until fine crumbs have formed. In a machine this will take a few minutes, but hand roughly 5 minutes. So to be honest there’s not much time difference between the two!

Once your flour looks like bread crumbs mix in the grated cheese, making sure it’s completely covered by the mix. Using a mixer you will to ice the cheese starts to form small balls, this shows it’s ready. By hand you will be ale to squeeze the mix in your palm and it will stay in that shape. This means that you can now knead the dough in the bowl. Simply squash all of the mix together using your hands, after a few squishes the dough will start to stick together and form. If this doesn’t happen then you can add a tablespoon of water to help it all stick together, but be careful not to add too much or it will go very sticky and need more flour!

Once the dough had come together wrap it in cling film and leave for 10 minutes, just on the side to rest is fine.

Now that the 10 minutes is up roll out your dough onto a lightly floured surface to about 3mm thick all over, try to get a rough rectangle, but it doesn’t make much difference if not it will just change the shapes!

Once the desired thickness is reached cut it into rough strips length ways and the width ways so you end up with some small square bits of cheesy goodness!

Finally place these squares on a lined tray and bake in the oven at 180c for 10-12 minutes, if you want you can sprinkle with salt and pepper before going in the oven to give extra flavour!

When these are cooked they will be a lovely golden colour and will feel slightly crispy round the edges, the bottom will also be slightly golden. Don’t worry if they seem soft, these crisp up while they cool 🙂
