Tomato Humous

This is possibly the only humous I actually like! Chickpeas have been hugely over done in my life, especially my childhood when our cousins came to stay, they were all very strict vegetarians. But the mix of chickpeas and sun dried tomato go so well together creating a wonderful dip that you can’t dislike 🙂

Ingredients:
2 tins of chickpeas
2 cloves smoked garlic
1/2 jar Sundried tomatoes
100ml olive oil
Salt and pepper

Estimated time: 10 minutes

Directions:

Firstly empty your chickpeas into a colander in the sink and allow them to drain.

Whilst they are draining get a small pan of water to boiling point. While this is coming up to temperature peel your garlic cloves and cut the ends off. Blanche your garlic cloves for 1 minute and then place them in cold water once the time is up to stop the cooking.

Now your chickpeas are drained pour them all into a food processor or a blender. To this add your garlic cloves and your tomatoes. Now I said half a jar which isn’t really that helpful! I would start off by adding 10 tomatoes, you need enough to give flavour which will change from person to person!

Start this all blitzing together, slowly pour in your olive oil so that a paste forms. Keep this blending until all of the chickpeas and tomatoes are well mixed and there aren’t big lumps left.

Add salt and pepper, mix through so the flavour is even. Make sure you try the humous so you can check the flavour and texture. If the humous is too dry slowly mix more olive oil into it, the same with tomatoes if the flavour doesn’t come through!

And then enjoy with crisps, pita bread or as a side with salad! This is such an easy and much loved dip, brilliant for parties and nibbles!! I hope you all enjoy this it’s soo tasty!!
